Prepare a cutting board, disposable gloves, wet kitchen towel, and a large knife for cutting the fudge.
Remove the hardened fudge from the fridge.
Take out the fudge from its liner, whether it's parchment paper or foil, making sure to remove it completely.
Adjust your 5-wheel pastry cutter to the size of your fudge.Lightly score the fudge with the 5-wheel pastry cutter, just enough to see where you need to cut.
Turn the fudge block 90 degrees and score again to create even squares.
If you are using a cheesecake pan for your fudge, you can skip this and the next steps. Otherwise, cut the edges if you used a regular baking pan with round corners.
With the edges neatly squared, the fudge block is now ready to be cut into smaller pieces.
Cut the fudge block along the scored lines, wiping the knife with a wet kitchen towel after each cut.
Turn the fudge block 90 degrees and push the pieces back together. Finish cutting the fudge using the scored guidelines.
