Then, beat it well with a whisk or fork to create an egg wash.
Grab the cherry filling, empanada dough, egg wash, and the empanada press mold.
Next, remove the separating paper from an empanada dough disc.
Lay the dough disc over the open press mold.
Then, brush the egg wash around the edge of the empanada dough.
Next, scoop 1.5 tbsp of the cherry filling into the middle of the dough. Make sure that there is no filling on the edges of the dough, then close the press to seal the empanada.
Then, using a small fruit knife, carefully cut little vents into the empanadas.
Repeat the filling, pressing, and venting process for the rest of the empanadas.
Next, preheat the air fryer at 350°F for 3 minutes.
Place a few of the cherry empanadas flat in the bottom of the air fryer.Do not try to squish a bunch in there. You want these to lay comfortably flat while cooking.
Lightly brush the top of the empanadas with the egg wash, then lightly spray with the cooking oil.
Then, cook the cherry empanadas for 8 minutes.
Flip the empanadas using kitchen tongs.
Spray the other side of the empanadas lightly with cooking oil.
Cook the empanadas again for another 4 minutes.
After cooking, transfer the cherry empanadas to a cooling rack. Repeat the cooking process for the remaining empanadas.

Storing Cherry EmpanadasTo store cherry empanadas: move them to an airtight container. Store in the fridge for up to 3-4 days. Or transfer the empanadas to a freezer-safe bag and freeze them for up to 3 months. Thaw them in the fridge overnight before reheating.
