Mix ¼ cup of vinegar and 1 ½ cups of water and soak the strawberries for 5 minutes.
Rinse the strawberries well so they don’t taste like vinegar.
Rinse strawberries and pat dry with a paper towel. Refrigerate the strawberries for an hour.
In a small bowl or in a fondue pot, combine the chocolate chips and coconut oil and melt the chocolate. If not using a fondue pot, heat the chocolate in a microwave for 30-second intervals, stirring between each time, just until melted.
Dip the strawberries in the melted chocolate, and then place them onto the baking sheet.
Decorate with sprinkles or chocolate drizzle.
Refrigerate until the chocolate is hardened, or about 1 hours.
