Bacon & cheese egg muffins
Easy and tasty breakfast in the cup for a busy family
Ingredients
- 5 eggs
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup heavy cream or milk
- ½ cup green onions
- ½ cup Precooked bacon
- ½ cup cherry tomatoes sliced
- ½ cup Mexican blend cheese
Instructions
- Preheat oven to 350° F. Grease muffin pan with spray cooking oil.
- In a large bowl, whisk together eggs, heavy cream, salt, and pepper.
- Place bacon, tomatoes, green onion, and cheese on the bottom of each muffin cup.
- Scoop egg mixture on top.
- Bake for 20-25 minutes.
